Here's the canned story again! Lol! My vision of green beans growing up was the Green Giant warmed up in a pot on the stove. Leading to 2 to 3 minutes in the microwave. When I saw fresh green beans in a pan I thought. "Wow, I won't be able to cook that!" Little did I know how that with some confidence, that I could! That's what I am here for! Give you the drive that something, anything can be done if we seek to learn & keep trying! We only grow stronger & wiser. If we don't understand, then ask questions because someone has an answer! Which leads to my sautéed green beans! It was inspired by my mother-in-law from 10 years ago. I followed her recipe to a "T" then made it my own. This is a recipe that took me several years to have confidence in to not measure anything. I can twist the ingredients around for a whole new taste! I start with either my big red cast iron coated or a large non-stick pan! This is a family for 5 w/ leftovers recipe. I use my 2 burner stovetop on #3 setting. My stove/oven are Kenmore that came with my house. It's 12 years old now. Therefore, I cook at a lower setting to control the food. I don't go past #4 setting. Warm the pan until the heat can be felt on the palm of the hand hovering over. Then add a few turns of the pan with extra virgin olive oil (good quality- Squizito Tasting -Butter flavor is what I use. It just brings the flavors out in the food better. Store bought is just fine.) & a tablespoon of butter (Pure Blends Avocado oil, I Can't Believe It's Not Butter or Country Crock Light is what I use). Chop up 1/2 of an onion. I chop so I don't have to cut later lol! I prefer red onion over yellow/white, either will work. 3 to 4 cloves of garlic chopped or smashed. When I am in a hurry, I smash to release the oh so goodness! Once the onions and garlic cook to a light golden brown like on the left, toss in fresh or fresh frozen green beans. I LOVE PicSweet Farms because they cook up perfect & with very little hassle. While I am cooking up supper with the green beans, I am making Swirl Cinnamon Bread on the side. WHOA! Blog to come! Toss in the bag (I add a bag & a half because we LOVE these green beans) & with tongs toss to coat with the onion mixture. It should like the above. They can be cooked covered or uncovered. Keep tossing them after 3 to 4 mins. Add wine or sherry after 5 mins or so, or don't add at all. Sometimes, I get distracted and forget lol! See below for detials.
Once the beans go from bright to a darker green & semi squishy, they are done! Like below! Cane be 15 to 30 minutes. Check the seasonings. Add more to suit your taste buds. I normally season it in a circle "around the clock" points in the pan twice. This is a great side dish for the hearty meat lover! Or a great main dish for the vegetarian lover! I use this dish with many different meals. Goes great with fish, chicken, beef & so on! The green beans blend in with couscous, pasta, mashed tators (I'm a southerner lol) rice and so forth. Add 1 tablespoon (5g) of almonds, 1 tablespoon (15 mL) of sugar-free maple syrup, 1 tablespoon (15 mL) vanilla extract, and 1 tablespoon (15 mL) of low-fat Greek yogurt to get a delicious soy almond shake.
